spicy zucchini latkes!

Yesterday I tackled the leftover groceries from a St. Paddy’s day shepherd’s pie. Inspired by lifesambrosia’s zucchini cakes, I crafted a funky hybrid of gardenbuger & latke. It went like so:

Sautée a sweet yellow onion, five or so diced mushrooms, and half a can of corn. When the onions are beautifully translucent, throw into a bowl with:

3 shredded zucchini
1 diced clove of garlic
1 slice whole wheat bread, toasted and thoroughly crumbled
2 eggs
teaspoon flour
smatterings of paprika, black pepper, salt, & other spices to your liking.

Mix, and fry by heaping tablespoonfuls ’til they’re golden. Serve with sour cream, applesauce, salsa.. they are easy to please.
